Saving StGeorge…..

Well with this we are not talking about a bank during the GFC but rather a bottle of 1986 Lindemann’s StGeorge Cabernet Sauvignon. As you all know post looking at our site that this all started with the need to create a space to relocate my wine from storage.

 

This is an example of what good storage means and helps with. I have had a 6 pack of this wine since roughly 2000 and have had it stored either in an offsite or in my home in a wine fridge. When I relocated it and was unpacking into my new cellar I noticed that I had some seepage marks running down the bottle and thinking it might be off decided to drink it. If it was good the wine was requiring a suitable partner for its richness and depth of flavour and colour. As such I cooked a slow roasted rib of beef with garlic butter mash and sautéed greens.

I opened the foil and with trepidation put in the corkscrew to open the bottle hoping that the cork would emerge in one piece which it did. After I decantered the wine I let it open up while the meat cooked. However after aerating the wine (something that is a must as far as I am concerned) while pouring and letting it sit for a couple of hours, it ended up being perfect. The point of this story is that your cellar and the right storage solution can give you those unrivalled moments  of is it ruined to the sigh of happiness as you sit with a glass of 30 year old red wine, with a lovely meal, with that special person and transform you away…….. to some place else.
